Stainless steel is also known as INOX steel, it is an austenic steel with elements such and Chromium and nickel as their main contents. The advantage of, using stainless steel bolts or stainless steel fasteners is that it does not erode or catch rust as compared to other normal steel grades when exposed to, water or at the outside.
Normally stainless steel are not 100% rust proof, they do catch rust but under very severe circumstances, like presence of low oxygen or where there is very high content of saline water. This is where genreally people prefer using SS 316 or AISI 316 grade, this is a better grade than SS 304 as it has higher concentration of nickel in it.
Even better grade than the above is 316S31, this is a tough steel with at least 10.5% nickel and 16.5% chromium and maximum Carbon content of 0.07% This also has higher molybdenum content which makes it more tough and gives it the extra strength to fight corrosion.
